    I have doubled the apple cider vinegar, added 1 teaspoon Maple syrup, bake tofu at 400 but watch closely. I serve this on a bed of chopped Romaine lettuce. I offer additions of sliced avocado, chopped onions, chopped cilantro, salsa, guac and tortilla chips.

    Ingredients

    • 1½ cups Mexican Rice
    • 1 avocado, stoned, peeled and diced
    • 1 cup cilantro finely chopped
    • 2 tomatoes, diced
    • 1 red onion diced
    • 1 cup black beans drained and rinsed
    • 1 pack firm tofu grated
    • 1 packet taco seasoning

    Instructions

    1. 1Toss tofu with seasoning.
    2. 2Spread it on a lined baking sheet and bake at 375 for 15 minutes.
    3. 3Prep the rest of the ingredients and add them to a bowl.
    4. 4Whisk all of the dressing ingredients together in a bowl.
    5. 5Once the grated tofu is ready, add it to the ingredient bowl, pour in the dressing and serve immediately.

    • 1 cup unsweetened vegan yogurt
    • ¾ teaspoon paprika
    • ¾ teaspoon chili powder
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon apple cider vinegar
    • ½ teaspoon ground cumin
