Vegan Cabbage Soup

Ingredients
- 4 cloves garlic
- 4 yukon gold potatoes
- 2 carrots, diced
- 2 stalks celery, diced
- 1 yellow onion, diced
- 1 tsp. ginger
- 1½ tsp. garlic powder
- 8 cups vegetable broth
- 1½ cups diced canned tomatoes
- ½ cup green cabbage finely chopped
- 500 grams extra firm tofu pressed and chopped
Instructions
- 1Add garlic and onion to a pot over medium heat and cook until translucent, approximately 3 minutes.
- 2Add the potatoes, carrots, celery and spices to the pot, stir and cook for an additional 5 minutes, until soft.
- 3Add the vegetable broth, diced tomatoes and cabbage to the pot. Bring to a boil, then simmer for 25 minutes until everything is cooked through.
- 4Add the tofu in the end, if using.
