    Vegan Banana Bread

    A wholesome banana bread made with oat flour and flax seeds - perfectly moist and naturally sweetened.

    Ingredients

    • 2 tbsp flax seed powder
    • 6 tbsp water
    • 2 cups organic rolled oats (ground into flour)
    • 3 bananas (preferably overripe)
    • 1 tsp baking powder
    • ½ tsp baking soda
    • 1 tsp cinnamon
    • ¼ cup dates (finely chopped)
    • 1-2 tbsp sesame seeds (optional)

    Instructions

    1. 1Preheat oven to 375°F.
    2. 2Mix flax seed powder with water and let sit for 5 minutes to thicken.
    3. 3Mash bananas well in a separate bowl.
    4. 4Combine the flax mixture with the mashed bananas.
    5. 5In a large mixing bowl, combine all dry ingredients (oat flour, baking powder, baking soda, cinnamon, and chopped dates).
    6. 6Blend the flax/banana mixture into the flour mixture until well combined.
    7. 7Pour the mixture into a silicone bread pan or parchment-lined bread pan.
    8. 8Sprinkle sesame seeds on top if using.
    9. 9Bake for 35-40 minutes or until a toothpick inserted in center comes out clean.
    10. 10Let cool before slicing.
