    Dr. Esselstyn's favorite superfood salad with kale, Napa cabbage, and Jane's 3-2-1 dressing.

    Salad

    Ingredients

    • 1½ bunches of kale, leaves stripped of spines, chopped in fine strips (almost like ribbons)
    • ½ head of Napa cabbage, finely shredded or chopped
    • ¼ red onion, thinly sliced
    • ½ cup grape tomatoes, halved
    • 3-4 carrots, peeled and grated
    • 1 cup raw edamame, shelled
    • 1 cup blueberries
    • ½ cup red pepper chopped

    Instructions

    1. 1Combine all ingredients and toss with your favorite dressing.
    2. 2Or try Jane Esselstyn's family favorite 3-2-1 dressing.

    Ingredients

    • 3 tablespoons of balsamic vinegar
    • 2 tablespoons mustard of choice
    • 1 tablespoon maple syrup

    Instructions

    1. 1Mix all ingredients in a small bowl and whisk until smooth.
