    Avocado Caprese Salad

    A twist on the classic Caprese salad, substituting avocado for mozzarella with fresh tomatoes and basil.

    Instead of the EVOO I used a bit of Balsamic Glaze. I marked this recipe, deelish/ easy peasey/ shows well. A great source for deelish SOS free balsamic vinegars is California Balsamics. californiabalsamics.com. Show stoppers for sure.

    Ingredients

    • 3 large heirloom tomatoes
    • 2 medium-sized avocados
    • ½ cup fresh basil
    • 1-2 tsp. Extra virgin olive oil (optional, I leave out)
    • Sea salt and pepper to taste

    Instructions

    1. 1Cut the tomatoes into thick discs and set aside.
    2. 2Cut the avocado across the middle (not lengthways) and remove the pit.
    3. 3Peel off the skin and cut into discs, about the same thickness as the tomato.
    4. 4Arrange the tomato slices on a plate or platter and top with avocado.
    5. 5Place a basil leaf on each, then drizzle with lemon juice and optional olive oil.
    6. 6Season as desired and serve immediately.
